Displays knowledge of all emergency procedures.
Follows set schedules and specific job duties.
Maintains personal grooming and uniform standards pursuant to Thunder Valley’s policies.

Displays and encourages teamwork in the department.
Communicates on a consistent basis with all managers. Keeps them abreast of all department activities.
Adheres to all policies and procedures as set forth by VP of Food and Beverage.
Demonstrates basic food knowledge, cooking techniques, knife skills, and ability to operate kitchen equipment.
Displays understanding of how to read and fill production par sheets.
Demonstrates ability to read order tickets from servers.
Prepares menu items consistently by following standard operating procedures (SOP) and recipe format.
Follows proper health department rules & regulations, HACCP, sanitation and safety procedures.
Acknowledges responsibility of station set up through utilization of station check list, labeling, rotation and storage methods.
Demonstrates proper cooking skills by presenting menu items that are flavorful, properly textured, and balanced.
Ensures guest satisfaction through presentation, food quality and positive guest relations.
Maintains cleanliness, safety and sanitation standards in accordance with department policies and those of the Department of Indian Health.
Ensures kitchen and equipment are in good working order and that the work area is clean and hazard-free. Notifies a supervisor immediately if kitchen and equipment are not in good working order.
Demonstrates the ability to work hands-on in any kitchen environment, including those involving a three-meal period and high volume production. Note: Majority of the production will be wok cooking, making soup, frying, sautéing, griddling, carving, broiling, roasting, chopping and steaming all meats, fish, vegetables, rice, noodle, poultry and seafood.
Is responsible for maintaining correct prep and production levels on a daily basis.
Works on all kitchen stations.
Cooks at wok in both Mandarin style and Hong Kong style.
Marinates all meats and seafood.
Assists in stocking product to designated areas.
Performs miscellaneous duties as required by chef and management.
Other duties may as assigned.
